I've got a KitchenAid Mixer with a grinding attachment and a pork shoulder roast in the frig. With a little sage, home ground is the way to control fat and taste.

I don't worry about controlling fat, but you've got it right that homemade is the way to go. It's a Christmas tradition in our family...the old fashioned Tennessee sausage ball. Yummy. Except we wrap ours around a pimento cheese stuffed jalepeno. With Irish Coffees and coffee cake Christmas is always so much fun. Tennessee Pride is just bad. If somebody asked me between Tennessee Pride and Jimmy Dean, I'd choose Jimmy Dean tbh. I haven't tried Wamplers.

Wow - Ghen - you're spot on - eatin' that kinda sh*t just ain't healthy - if anyone is gonna eat "sausage" - get the stuff made by the folks who know WTF the're doing..

charcuterie ain't a big deal - the Germans, French, Mexico etc. and their decendants have been doing it for centuries.. Delicacies - starting with sang de porc is a good example.

Is there anything better than a slice of andouille eaten cold? Now imagine eating a spoon full of Wamplers...

Or how about platines - seasoned the way you like then wrapped in caul fat - grill it and slap it between plain ole white bread - any ya got a meal..

When I buy store bought I buy Jimmy Deans....mostly I get it in the fall from a local farmer who kills pigs in the fall and makes his own.....Its goooood....

This guy has been my personal butcher for the last 15 years or so. He makes a bitchin breakfast sausage. The seasoning mixes are spot on, buy them from the interweb. If you are a MFFF and pass by Melbourne bring an ice chest, the brats, Kielbasa and the hot Italian are the best ye ever tasted.

I'm pretty sure the farm my mom grew up on was the one the Wamplers owned. Mr. Wamplers dad owned it before my grandaddy bought it from him...later, he always wanted to buy it back grandaddy always said no......the Wampler's would always let us go by the factory and load up on sausage.

Chris Wampler. Think he wore #77 and played tailback for Lenoir City. He weighed about 2 bills seemed like. Someone said we need to put Gerald Jones at QB, throw our best 3rbs out there and run the wishbone.

Back when i was at Tyner our football team made the playoffs one year and we had to travel....no scratch that, I was at Tyner JUNIOR high...anyway, Tyner had to go to Lenoir City and they ran the wishbone AND they would hust roll the QB out left or right and they had 3 big f'ers in the backfield, they would go full on student body left or right...we hung in for about half a quarter and eventually they just started trucking people. We got waxed.


At least that's how I remember it.

When the Tyner alma mater is played, the Rams hold the #1 finger in the air. Midway through the anthem, everyone says, "switch," and they then raise their other hand with #1 into the air.

I've asked several Tyner fans about this and they have no idea what I'm talking about. Is this a Tyner tradition or not?

Sidenote...the thing I remember most about Tyner is the gym and the unique lighting. It had a strange aura to it.

Also, Tyner Junior High was called the Yellow Jackets and the senior high the Rams. Why? Only other school I've seen do the same is Soddy-Daisy, whose junior high teams were called the Twins and senior high the Trojans.

It is a tradition...but I have NO idea why they do it, I remember asking that but don't remember the answer...My 25 year reunion is coming up, I'll see if i can find out. I graduated in '84. I'm not sure on the Kendall friends thing but form what some guys on VC tell me, Kendall's a swell guy. ;)

Swaggerty's is my favorite. Smaller East Tennessee company...quicker to market due to limited geographic distribution- made in Kodak on the banks of the Holston River. How in the world no one else mentioned is beyond me.This is the Mayfield/JFG equivilent.
