OK OK calm down, we'll do habaneros and exotics in another thread. This is about cayenne pepper sauce, mainly from Louisiana.

Or, name your own.

BTW, for you people who use Texas Pete just go ahead and excuse yourself from this discussion. That shit aint hot sauce, its
cayenne flavored water juice. Emeril is likewise DQ'd from this list.

I personally think regular Tabasco is the most universal of all these hot sauces, but I really do like Prudhomme's hot sauce too,
got a great flavor but its not very hot. Goes well with anything.

Here's a tip on Tabasco. Buy a few extra bottles, date code them, then put them up in a cabinet for about 3 years, then they are ready to drink.

Bottle aging mellows the stuff out, leaves all the heat but erases that bite Tabasco has...it also begins to turn brown at 5 year, but dont worry, its still good.
