Kitchen Basics makes an A1 quality product line. TIG approved and endorsed. The West melbourne Publix should have the Clam stock early 2012

I used to make my own shrimp stock, but that shit that comes in a jar (cant remember the company) Lobster Base is better I think for gumbo and ettoufee and shit. Thankee.
Let me know if you need me to Fed Ex you some Clam stock. Kitchen Basics is the best IMO, followed by Emerils which is overpriced. Stay away from the Wolfgang Puck Organic shit. What he calls "stock" is when they bring a chicken in and wave him over a pot of boiling water with some celery and shit, that stuff SUCKS!!

I stopped making chowder when I contemplated a bottle of clam juice that was five years out of date and it smelled the same as the stuff that was new.
I tend to go to Penzey's for spices and some dried herbs.
What's the source of your Lobster base?

They have been around forever 99% to the trade, must order off the innerweb. Don't have that Pansies place near Melboring that I know of. Will investigate next time in Jax.

I'm guessin' things do vary region to region. Just about every dump/kitchen/diner in the region do stocks.. Bumped in to a "jarhead" John Besh in one of them in Abbeville a couple weeks ago - had 4 or 5 pots simmering all the time.
bones, water, mirepoix, bouquet garni, - no salt.
Do the commercial stocks contain salt?

Humble....I too don't use commercial stock very often and I never ever use base because they not only taste bad, they usually contain MSG, which gives me terrible heart palpitations. And to answer your question, yes commercial stocks do contain salt.
Hey Ghengis...is that Kitchen Basics brand made in Canada? I think I remember tasting that one not too long ago and thought it was actually a bit sweeter?? than the Wolfgang Puck and Swanson brands. Maybe even cinnamony or something.....it seems there is a reason I remember that brand. Just curious.

Ohio, right......seems I remember that now. Thank you. I have only tried the chicken one, I will try the clam on your recommendation. But I'm warning you Gheng, Ohio is landlocked and that chili they're famous for sucks ass...and their football teams too :)

Cincinatti Chilli? Its terrible, I do like Chilli Spaghetti though. Its one of my favorites.

Yes, Skyline being just awful.
We call it chili mac in our home because my momma always makes it with macaroni instead of spaghetti, but, mmmmmmmmm. Great great stuff!

errrrrrrg. Wrong O Roonie. Muppet news flash, chili is German (goulash) not frickin Mexican. Skyline does suck, there are many awsome mom and pop parlors that are wonderful in Cincinnati. Mom's side is from the hills O' Southern Ohio, don't blaspheme.
