I have a great really easy drop dough cobbler recipe
(serves 6)
For the filling
3 1/2 pints of fresh blueberries washed and destemmed
3 fresh peaches, peeled and cut into 6ths
1/2 c sugar
1/4 stick of melted butter
1 tsp of cinnamon
1 tsp of cornstarch
For the topping
1/2 cup of sugar
1 cup of unbleached all purpose flour
1 cup of self rising corn bread mix (I like Martha white)
3/4 stick of melted butter
1/2 cup butter milk
Preheat oven to 350 degrees
combine the items for the filling in a small bowl, mix well and divide the fillings into 6 small ramekins. Put them on a sheet pan in the oven and bake for 15 minutes so the fruit can cook a bit before adding the topping.
While the fruit is cooking make the topping by combining all ingredients and stirring well. It should be a consistency of a thick pancake batter. If you need to add more buttermilk it's okay.
After 15 minutes pull out the fruit and drop teaspoon fulls of the batter on to the fruit until it's covered. If the batter sinks to the bottom do not worry it will rise. Put them back in the oven for another 15-20 minutes until the cobblers are golden brown and delicious (GB&D)
Serve while still warm with vanilla icecream. This is my FAVORITE summertime dessert. I hope y'all enjoy it.

Don't think that qualifies as "easy" and reading that would be like reading one of Smithy's diatribes.....uh..no offense :033102kiss_1_prv:

It read like a recipe... they are not known for exciting prose.
(Blackie thinking, while reading above): Oh my gosh, unbleached flour! What can happen next, SELF-RISING CORN BREAD MIX!!! HOLY COW!!! how is this going to end!?!?!? GOLDEN BROWN AND DELICIOUS!!! SUH-WEEEET!!!!! Whew, I'm spent. What a read!

Don't misunderstand. Chef's recipe deserves it's own thread....I was going for EASY in my thread!
While I'm at it.....In the winter, do that Rotel dip thing but punt the chips, throw in pasta and eat it like a meal. Stick to your ribs and you'll be "locked up" for a few days with all the cheese but what the heck...........
