This months update will start with me throwing one of my all time heroes under the bus. Gordon Ramsay, known for his obscenity laced rants against bad restaurants and bad cooks has gone soft. I remember him making a bonfire of celebrity chef cookbooks during his BBC show, The F Word. (F being food of course.) Imagine my shock and surprise when my wife called into the study, “Gordon’s on the Rachel Ray show.” “What is he doing, throwing chicken at her, calling her a donkey, or spanking her generous backside with a wooden spoon?” “None of the above, he’s pitching a cookbook, he‘s a really nice guy.” If you are one of these doomsday theorists, forget Nostradamus, this is a sure sign that the end is indeed near.
The next one that needs to walk the plank is Susie Orman. Yes that Susie Orman. She managed to outrage the entire industry with her comments on the Oprah show along the lines of don’t eat out at restaurants as financial advice. What should I do Susie, put it in the stock market? A few statistics for you Susie. The restaurant industry employs 9% of the American workforce, is expected to add 1.8 million jobs through the next decade, and has a total economic impact of 1.3 trillion (with a t Susie) dollars. Nearly half of the adult population of this country has worked “in the business” at one time or another. With this stimulus and that stimulus throwing money down the hole, how about a certificate for 100 dollars for every taxpayer to have an evening out at their favorite restaurant? The money is guaranteed to turn over at least three times, which is much more than some road construction which is only going to slow us down. Stay in your foxhole Susie, I’m going out for lobster.
All is not doom and gloom, we are getting Five Guys Burgers and Fries in the new Plaza at Palm Bay road and I-95. For those that are not familiar, I ate at one of these about three years ago in Tampa, and immediately inquired as to franchise availability when I got home, but it was not to be, Florida had been sold out. They make a good burger although they cook them all well done, which is not my thing. The fries however are masterful, the best you might ever try. I can take my favorite TV chef selling out, and the economy going to hell in a hand basket, if I’ve got great fries, I can somehow deal with it.

Oh fucking hell TIG. How in the hell am I supposed to read that? Good Lord. I let you HAVE the moderators job, so, as a favor, to me, can you allow me the honor of being your editor? :033102kiss_1_prv:

Oh, and you need to come to my house for fries.....mmmmmmmmmmm and medium rare burgers. Have you ordered those prime burgers from Allen Brothers. OMG. TIG, I'm a homemade burger girl, but they ARE GREAT! Oh, and their hotdogs suck ass.

Trying to keep count of his restaurants that have been turned back to the hotels that house them.
Ramsay also has his Father in Law as his co-owner/manager, and then Ramsay gets caught in some extramarital affairs. Unwise, Ramsay, unwise.

But, real world, Five Guys will rule the east until In n Out Burger passes to another generation and that generation decides to expand it to the east.
In and Out has the fresh grilled burger down to perfection; french fries cut in the restaurant that day...Show me a Five Guys' fries that doesn't drip grease ...taste is good, but the Californey In n Out fries are tasty and not greasy (and I didn't think that was possible.)

Five Guys is a local franchise and thus I've been eating their grease for years. The original location was here in Arlington.

But In n Out is in a whole other league. I seek one out everytime I have to travel to LA.

I like Allen Brothers particularly the Wagyu beef, big bucks though. If you have a good relationship with a butcher do the following. Have him save the suet for you that he trims off his tenderloins. Have him grind that in with round or sirloin about 80/20 lean/fat. I learned that one from Littons.

They are expensive and their customer service is the shittiest in America (Yes, my CHRISTMAS roast I ordered DECEMBER 12th got here December 27th and they refused to pay for ANY OF IT). But their meat is sooooo good.

TIG is right that grinding ones own meat is the way to go. Tastes better and is generally safer.

If you are in Atlanta, the burger joint FLIP is the creation of Top Chef contestant Richard Blaise. He offers a Wagyu burger. (Too pricey for us.) His other burgers are designer burgers with touches of molecular gastronomy. They are good, with different sauces and veggies.

I expect someone will write a best selling novel that starts "Sustained by a double double each morning of my life in California....."
